Tony and the Newfoundland team briefly head over to Maïté Legasse’s home in Saint-Pierre and Miquelon where she served up some sea urchin paté, stuffed squid over rice, braised halibut, local cheese, and tart with local baked apples and blackberries.

Tony kicking it with the kitchen staff over at Raymond’s, where he was treated to a decadent multi-course meal that included scallop crudo with smoked roe, tuna prepared with berries, caribou heart with alder and chanterelle mushrooms, and a modern take on Newfoundland’s signature dish, Jiggs’ dinner.
